Huevos Motulenos

A Mexican breakfast plate introduced from Veracruz, Mexico, that leaves you with a great tasting experience and wanting more later. This plate was first brought and taught to my mom and now me by my grandma who is from Veracruz, Mexico. It brings memories and has a great taste I always build a crave on. So many cultural dishes Mexico has to offer and out of most breakfast plates I love, i'd have to introduce to you this one. It's a plate I love making! I myself have introduced this plate to friends of mine that have never tasted or heard of it and by their last bite they're asking how I made it and how did I know of it. This plate gets you full but wanting another bite! If you're not much of a tomato lover, maybe this plate wouldn't be so tasty for you, as it is showered with tomato sauce that gives it that boost of a great taste. There are different ways to make this plate but this is the way I was taught.. For one plate The ingredients are: 2 eggs, 2 corn tortillas, green peas, refried beans, fresh mexican cheese, salt, onion, 3 tomatos, oil, and water. The first step is to boil the tomatos and when they're soft you blend them with onion, salt, and water and pour the substance into a pot and add the green peas and wait until it boils, in a pan you dip a tortilla in the oil flipping it for less than a minute, and you do the same with another tortilla. In another pan you fry the two eggs sunny side up, on one of the tortillas that has been dipped in the oil already, you spread the beans on top and stack the other oil dipped tortilla on top and add the fried eggs on top and shower it with the tomato sauce and top it off with the fresh Mexican cheese and enjoy! Here is a picture that is really similar to my plate, except its topped with some pieces of ham and some fried plantains on the side and there is no cheese added.
